For many folks, the best part of the traditional Thanksgiving feast is the leftovers. This can be especially true for those who did the actual cooking. Roasting a whole turkey is big project, to say nothing of the preparation that goes into the traditional accompaniments, and then coordinating the timing of every dish so that all of the elements of the meal are ready at the same time!
For exhausted Thanksgiving Day chefs, being able to quickly and easily put together a delicious plate of food from the leftovers can feel like a real luxury. And let’s be honest, a slice of cold pumpkin pie makes a GREAT breakfast! But in my opinion, the absolute BEST thing about Thanksgiving leftovers is the myriad of options for creating turkey sandwiches.
My ‘go-to’ version is pretty much any turkey meat (white or dark) and some crisp, iceberg lettuce on soft white bread that’s been generously spread with mayo or Miracle Whip (we can debate which is best another time but I like both in this application). I know it’s basic, but it’s SO delicious.
